You can buy a turkey breast or frozen turkey all year long. What I like to do is stock my freezer with a few extra turkeys during the holidays when they go on sale. But during the rest of the year when I am craving turkey I will buy a whole frozen turkey breast to bake for the family.

This Easy Crock Pot Turkey Soup recipe is a perfect way to use up left over turkey meat. If you don’t want to buy a frozen turkey when it seems like no one is baking a turkey during the other 10 months of the year you can buy thick sliced turkey breast from the deli to make this Crock Pot Turkey Soup recipe. You’ll need about 2 lbs of deli turkey meat.
Or you could substitute turkey sausage for the left over baked turkey meat in this slow cooker turkey soup recipe.
Or you could use left over cooked chicken meat since that is readily available easier than turkey.
How to Make Easy Crock Pot Turkey Soup
Ingredients
- 3 cups of cooked turkey, cubed
- 2 cans Italian style stewed tomatoes
- 15.5 oz can red kidney beans, drained and rinsed
- 15.5 oz can pinto beans, drained and rinsed
- 15.5 oz can navy beans, drained and rinsed
- 1/2 cup chopped onion
- 1 TBS minced garlic
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp ground black pepper
- 32 oz chicken broth
- 1 large bay leaf
Directions
- Place all of the ingredients into a 4 or 6 quart crock pot slow cooker. Cook on low for 6-8 hours or high for 3-4 hours.
Easy Crock Pot Turkey Soup Recipe
Ingredients
- 1/2 cup chopped onion
- 1 tablespoon minced garlic
- 15.5 oz. can red kidney beans (drained and rinsed)
- 15.5 oz. can pinto beans (drained and rinsed)
- 15.5 oz. can navy beans (drained and rinsed)
- 2 cans Italian style stewed tomatoes
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 large bay leaf
- 32 oz. turkey or chicken stock
- 3 cups cooked turkey (cubed)
Instructions
Prep
- Chop and mince the onion and garlic.
Make the soup
- Open the cans of beans and rinse well. Drain in a colander before adding them to the crock pot.
- Open and pour the stewed tomatoes in with the beans.
- Add the Italian seasoning, salt, ground pepper and bay leaf.
- Pour the turkey or chicken stock in.
- Add the cooked and cubed turkey meat to the slow cooker.
- Stir the ingredients to combine,
- Place the lid on and cook on low for 4 to 6 hours or high for 3 to 4 hours.
- Serve the soup in a bowl with a crusty loaf of bread or soup crackers.
