Ingredients
3lbs.boneless chicken breast halves
1medium whole onion
3smallcarrotscut into bite size pieces
1largebay leaf
1teaspoonsalt
1teaspoonblack pepper
5cupslow sodium chicken stock
3cupsfrozen cheese tortellini
1handfulfresh spinach leavestorn
15oz.can cannelloni beans
salt and pepper to taste
Instructions
Place the chicken, onion, carrots, bay leaf, salt and pepper into a 7 or 8 quart crock pot slow cooker.
Pour the chicken broth in and stir to combine.
Slow cook for 2-3 hours on high until chicken is cooked through.
Remove the whole onion and discard.
Shred the chicken into bite size pieces.
Tear spinach leaves in half and add to the crock pot.
Add the beans and tortellini to the crock pot.
Continue to slow cook for 1 hour longer on high or until the tortellini is heated through.
