Easy Crock Pot Turkey Soup Recipe

This easy Crock Pot Turkey Soup recipe is a perfect way to use up leftover turkey meat after the holidays or you could use turkey sausage, thick sliced turkey deli meat or even leftover cooked chicken.

Ingredients

  • 1/2 cup chopped onion
  • 1 tablespoon minced garlic
  • 15.5 oz. can red kidney beans drained and rinsed
  • 15.5 oz. can pinto beans drained and rinsed
  • 15.5 oz. can navy beans drained and rinsed
  • 2 cans Italian style stewed tomatoes
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 large bay leaf
  • 32 oz. turkey or chicken stock
  • 3 cups cooked turkey cubed

Instructions

Prep

  • Chop and mince the onion and garlic.

Make the soup

  • Open the cans of beans and rinse well. Drain in a colander before adding them to the crock pot.
  • Open and pour the stewed tomatoes in with the beans.
  • Add the Italian seasoning, salt, ground pepper and bay leaf.
  • Pour the turkey or chicken stock in.
  • Add the cooked and cubed turkey meat to the slow cooker.
  • Stir the ingredients to combine,
  • Place the lid on and cook on low for 4 to 6 hours or high for 3 to 4 hours.
  • Serve the soup in a bowl with a crusty loaf of bread or soup crackers.
