Easy Crock Pot Turkey Soup Recipe
This easy Crock Pot Turkey Soup recipe is a perfect way to use up leftover turkey meat after the holidays or you could use turkey sausage, thick sliced turkey deli meat or even leftover cooked chicken.

1/2 cup chopped onion 1 tablespoon minced garlic 15.5 oz. can red kidney beans drained and rinsed 15.5 oz. can pinto beans drained and rinsed 15.5 oz. can navy beans drained and rinsed 2 cans Italian style stewed tomatoes 1 teaspoon Italian seasoning 1 teaspoon salt 1/2 teaspoon ground black pepper 1 large bay leaf 32 oz. turkey or chicken stock 3 cups cooked turkey cubed
Make the soup Open the cans of beans and rinse well. Drain in a colander before adding them to the crock pot.
Open and pour the stewed tomatoes in with the beans.
Add the Italian seasoning, salt, ground pepper and bay leaf.
Pour the turkey or chicken stock in.
Add the cooked and cubed turkey meat to the slow cooker.
Stir the ingredients to combine,
Place the lid on and cook on low for 4 to 6 hours or high for 3 to 4 hours.
Serve the soup in a bowl with a crusty loaf of bread or soup crackers.
