3 lbs. boneless chicken breast halves 1 medium whole onion 3 small carrots cut into bite size pieces 1 large bay leaf 1 teaspoon salt 1 teaspoon black pepper 5 cups low sodium chicken stock 3 cups frozen cheese tortellini 1 handful fresh spinach leaves torn 15 oz. can cannelloni beans salt and pepper to taste
Place the chicken, onion, carrots, bay leaf, salt and pepper into a 7 or 8 quart crock pot slow cooker.
Pour the chicken broth in and stir to combine.
Slow cook for 2-3 hours on high until chicken is cooked through.
Remove the whole onion and discard.
Shred the chicken into bite size pieces.
Tear spinach leaves in half and add to the crock pot.
Add the beans and tortellini to the crock pot.
Continue to slow cook for 1 hour longer on high or until the tortellini is heated through.
Adjust the salt and pepper to taste.
