Crock Pot Chicken Tortellini Soup

Ingredients

  • 3 lbs. boneless chicken breast halves
  • 1 medium whole onion
  • 3 small carrots cut into bite size pieces
  • 1 large bay leaf
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 5 cups low sodium chicken stock
  • 3 cups frozen cheese tortellini
  • 1 handful fresh spinach leaves torn
  • 15 oz. can cannelloni beans
  • salt and pepper to taste

Instructions

  • Place the chicken, onion, carrots, bay leaf, salt and pepper into a 7 or 8 quart crock pot slow cooker.
  • Pour the chicken broth in and stir to combine.
  • Slow cook for 2-3 hours on high until chicken is cooked through.
  • Remove the whole onion and discard.
  • Shred the chicken into bite size pieces.
  • Tear spinach leaves in half and add to the crock pot.
  • Add the beans and tortellini to the crock pot.
  • Continue to slow cook for 1 hour longer on high or until the tortellini is heated through.
  • Adjust the salt and pepper to taste.
  • Makes 6 servings.
